Serves 4 people
ROASTED PEARS:
CARAMELIZED PECANS:
VANILLA WHIPPED CREAM:
1. Preheat the oven to 170°C (340°F). Peel and halve the pears.
2. Arrange the pears in an ovenproof dish and moisten with a little water. Chop then arrange the butter over the pears and sprinkle with brown sugar. Bake for 35 to 40 minutes. Baste the pears midway through the cooking.
3. While the pears are baking, make the caramelized pecans: bring the maple syrup to a boil in a small saucepan. Add the pecans and stir for a few minutes until the syrup has reduced. Arrange the pecans on a sheet of baking paper, sprinkle with a pinch of fleur de sel, and let cool completely. Finally, crush the pecans into uneven pieces.
4. For the whipped cream: make sure your bowl and the liquid cream are nice and chilled.
5. Add the cream and mascarpone to the bowl and whip into a whipped cream. Add the powdered sugar and vanilla beans (previously removed from the pod). Whip the mixture again.
6. Arrange the dessert on your plate: start with the whipped cream, then add a pear and some caramelized pecans. Top with some juice from the baked pears and serve!
